Kesari made using rava (semolina) is a quick sweet. It takes just 6 to10 minutes, whether you cook in a stove or a microwave. It is simple for begginers also. So go ahead and try this.
Cooking time 6 minutes.
Rava 1 cup.
sugar 1 cup.
Ghee 2 tablespoons.
Saffron a few leaves.(mix with 1 teaspoon warm milk)
Cashewnut 5 nos.(cut into pieces)
Place the rava in a microwave safe container and micro high for 90 seconds stirring once in between. Add ghee mix well and add 2 cups water. Micro high for 3 minute, stirring once in between. Add the sugar, cardamom powder and saffron and mix well. micro high for 2 more minutes. Stir once in between. The kesari will take 2 minutes to set. Transfer to a serving bowl. Decorate with cashew pieces lightly fried in ghee.
Method to cook in a gas stove
Roast rava with ghee in a kadai,stirring continously till it is pink. say around 2 minutes in medium flame. Add 2 cups warm water, mix well and cook till the water is absorbed, stirring continously.Add the sugar, cardamom powder and saffron and mix well.Cook for 2 more minutes. Transfer to a serving bowl. Decorate with fried cashew pieces.
