Ingredients
Chopped cabbage 3 cups.
Grated coconut 2 tablespoons.
Oil 2 teaspoons.
Curry leaves 1 twig.
turmeric powder 1/4 teaspoon.
Hing powder 1/4 teaspoon.
Mustardseeds 1/4 spoon.
Urad dal 1 teaspoon.
Salt to taste.
Method
In a microwave safe container mix cabbage,1 table spoon water, hing and turmeric powder. Micro high for 6 minutes.
Heat oil in a kadai, add mustardseeds. when it crackles, add urad dal and fry till golden. Add the curry leaves, cabbage and salt. Fry for 2 minutes, add the coconut stir for 1 more minute, and put off the fire. Serve as a side dish.
You can also par boil the cabbage in a gas stove, add around 1/4 cup water. Never drain the water after cooking the vegetable as the nutrients will be lost.
